4 c. peeled, cored & diced apples
2 eggs
2 c. white sugar
2 tsp. cinnamon
½ c. salad oil
2 c. flour
1 tsp. salt
1 tsp. baking soda
¾ c. chopped walnuts
Preheat oven to 350 degrees. In a large bowl, beat the apples and eggs together well. Add the sugar, cinnamon, and salad oil. Mix well. Add the flour, salt, baking soda and walnuts. Beat again. Butter the bottom only of a 9x13 inch cake pan. Pour in the batter and set aside.

Cinnamon Walnut Topping

¼ c. packed brown sugar
½ c. white sugar
½ tsp. cinnamon
¼ c. chopped walnuts
In a small bowl, using your fingers, mix the sugars, cinnamon, and walnuts together. Sprinkle over the top of the cake batter. Put in oven and bake about 1 hour, but check as it gets close to the end. If a toothpick comes out clean, it’s done. Freezes well.
